Fresh firm green tomatoes sprinkled with black pepper and salt is a very tasty snack. However, dipping the green tomatoes in egg and lightly frying, takes the flavor to a whole new level. It is a perfect side dish to many meals .
It is a seafood weekend and what better way to enjoy it than having some fresh blue crabs. I actually bought and cleaned the crabs days earlier, but stored them in the freezer in a zip lock bag. Fresh blue crab meat is sweet and succulent with a mild seafood smell. If the crab has a strong foul smell ,then it probably wasn’t fresh or properly cleaned. Surprisingly all the crabs I used in this recipe had a lot of eggs which was very tasty.
Stir-Fry Blue Crab: served with rice and green tomatoes
4-5 Blue Crabs washed and cleaned
1/2 cup chopped yellow onions
1/2 cup chopped parsley (alternatively use your favorite herb)
1/2 cup yellow onions, chopped
1/2 cup chopped spring onions
1 medium red tomatoes, chopped
1 teaspoon minced garlic
4 tablespoons peanut oil (alternatively use canola or olive oil)
3 tablespoon soy sauce
2 bouillon cubes
Other seasoning to taste (salt and hot pepper)
Jasmine Rice , boiled
1 large firm fresh green tomatoes, sliced into rings
1 fresh egg
2 tablespoons of canola oil
Wash and clean the crabs thoroughly. Personally I prefer to clean the crabs first before any form of cooking or steaming. After cleaning I replace the hard dorsal shell and close tightly. I rather not have the waste be heated up, along with the crab meat.
Heat up oil in a wok or pan large enough to prepare the crabs. Add onions and minced garlic, fry for 15 seconds. Add tomatoes ,spring onions and stir. Add bouillon, pepper and soy sauce,stir thoroughly and cook for 1 minute . Finally add the parsley, stir and cook for 30 seconds . Since soy sauce has already been added, taste the stir fry before adding salt.
Add 1/2 cup of water to the stir-fry, stir and add crab ‘belly side’ facing down. Cover and cook for 8 minutes. Gently stir and turn crab over, allowing the sauce to seep into the crab. Cook for 10-15 minutes.
Heat 2 tablespoons of canola oil in a frying pan
Sprinkle black pepper and salt on both sides of the sliced green tomatoes.
crack the egg into a bowl, dip tomato slices into the egg and fry.
Serve the Stir-fry blue crab with rice and green tomato slices.
