In my opinion, there is no cookie cutter way of making a good sauce. There are a ‘gazillion’ sauce recipes out there, from the recipes past down from generations to generations to others created by accident or by intent. The key is to prepare a sauce with the right flavor combination and right food pairing.

Spaghetti with green sauce recipe.



Green Sauce
• Green peppers (1 cubanelle pepper, 1 Poblano pepper, 3 Jalapeño peppers
and 1 bell pepper).
• 6 large fresh basil leaves
• 1 medium size onion, chopped
• 1 tsp chicken bouillon
• 1 tsp curry powder
• 1/2 tsp salt
• 1 cup canola oil

Note: Alternatively, you can just use green bell pepper and fresh basil leaves, if you don’t have access to other green peppers. However, in this recipe, the Jalapeño pepper is hot, so if you want a little kick to the dish but don’t have Jalapeños, add any other pepper of your choice.


Chicken Breast
• 2 chicken breast
• 1/2 tsp curry powder
• 1/4 tsp dry thyme
• 1/4 tsp salt
• 1/2 tsp chicken bouillon
• 1/2 cup canola oil (alternatively,use butter)

  1. Place the chicken breast in a bowl and season with the chicken bouillon,
    curry powder, dry thyme and salt. rub seasoning all of chicken breast and
    set aside for 15 minutes. In the meantime, move to step 2.
  2. Wash and remove the seeds from the green peppers. Blend green peppers,
    basil leaves and half of the chopped onions with 1 cup of water.

  3. Pour blended sauce in a pot and cook till the excess water evaporates.
    While the sauce is boiling, move to step 4.

  4. Pre-heat oven to 375 degrees F. Heat the 1/2 cup canola oil in a skillet
    or frying pan, add chicken, and saute until slight golden brown, turning
    once. Place skillet with chicken in the oven for 15 min or till cooked.
    In the meantime, move to step 5.

  5. Cook spaghetti until slightly tender but still firm, drain out the water
    and set aside.

  6. Heat 1 cup canola oil in a pan, add the rest of the onions and allow to
    caramelize. Add cooked blended sauce from step 3, stir and cook for 4
    minutes. Add chicken bouillon, curry and salt. Stir and add 1/4 cup
    water. Add spaghetti and toss till the sauce is fully incorporated with
    the spaghetti. Cook for 2-3 minutes or till spaghetti is fully cooked.

  7. Serve spaghetti with chicken and garnish with tomatoes and basil leaves.
